Styrian frothy apple soup
A festive Austrian soup: tender, sweet apples simmered in a broth with cinnamon, deglazed with sekt, and then blended with cream and Calvados.
Apple soup was traditionally served on farms. Here is a modern version, inspired by the Austrian region of Styria, which adds a fruity touch with Styrian apples and elegance with the use of champagne and Calvados.
