Directions
- Clean the squid under cold water: separate the head from the body, remove the transparent cartilage, the internal organs, and the ink sac, then remove the fins and the skin.
- Keep the tentacles, remove the beak, then cut the body into regular rings. ≈ 8 min
- Thoroughly rinse and drain the rings for a few minutes, then dry them with paper towels. ≈ 2 min
- Heat the oil in a high-sided frying pan over medium heat, without letting it smoke. To check the temperature, drop a small piece of bread into the oil: it should sizzle.
- Place the rings in a plastic bag, shaking gently. Remove any excess semolina using a sieve. ≈ 3 min
- For a dough version, whisk the eggs and then dip the rings in them before passing them through the semolina.
- Fry the squid in small batches for a maximum of 4 to 5 minutes, turning them frequently, until they are golden brown and cooked through.
- Drain them with a skimmer onto paper towels. ≈ 2 min
- Season, add some lemon slices, and serve hot and crispy. ≈ 2 min
