Polenta taragna
Valtellina polenta: a mixture of cornmeal and buckwheat cooked in a pot, enriched with butter and then finished with melted, rich cheese (bitto).
Taragna polenta is a traditional recipe from the Valtellina region. It is characterized by its dark color, due to the use of yellow and black buckwheat flour. Unlike other preparations, cheese is added during cooking to create a unique texture.
