Kaeng nopphakao, an old Thai curry with nine ingredients
An old-fashioned Thai curry without coconut milk: pork, shrimp, and three types of fish cooked in a broth of chili peppers, shallots, and garlic, with kid…
This recipe comes from “Mae Krua Hua Pa,” one of the earliest Thai cookbooks, published in 1908. The ingredients are measured in baht and salueng, the traditional units of weight; the curry, which is clear and has a balance of sweet and sour flavors, is adjusted to taste at the end of cooking.
