Vegetarian tofu and seitan sausages
A vegetarian sausage made with seitan and tofu, seasoned with cilantro, paprika, and oregano: it grills like a traditional bratwurst, but without any meat.
The tofu and seitan sausage closely resembles a traditional bratwurst. The gluten expands during cooking and firms up as it cools; the tofu prevents it from becoming dry and rubbery.

Directions
- Mix the water with the liquid ingredients, such as soy sauce. ≈ 4 min
- Mix the gluten-free flour with the spices separately, as the dough becomes difficult to mix once it has been formed. ≈ 4 min
- Crush the tofu with a fork and incorporate it dry into the flour mixture. Add any desired pieces of dried onion, if using. ≈ 4 min
- Add the liquids to the solids and mix with the gluten flour to form a dough. ≈ 10 min
- Roll the dough into sausage shapes and place them in the frying pan.
- If you want to grill them afterwards, poach them in water to help the gluten lose its rubbery texture.
- Heat a non-stick frying pan with oil and cook the patties, turning them and pressing them with two spatulas to give them a round shape.
- To help them maintain their shape, bake them for about 10 minutes at 180 °C in the oven before glazing.
