Roasted pork buns, steamed taro cake flavored like roasted pork
A delicacy from Trà Vinh: layers of tapioca and coconut milk dough alternating with thin slices of taro, steamed under a “red rind” made from gac berries,…
The “quay pork” pastry does not contain pork: this sweet cake, famous in the Trà Vinh province, only imitates the appearance of a piece of roasted pork with its skin. Taro, rice flour, and coconut milk make it a soft and delicious treat.

Directions

- Sift the dough to ensure it is smooth. ≈ 3 min
- Mix the gấc powder in 20 ml of warm water, filter it into 200 ml of white paste, and mix well: this will be the “outer layer”. ≈ 4 min
- Peel the taro and cut it into very thin slices. ≈ 8 min
- Bring the water in the steamer to a boil, grease the mold, and place it in the steamer basket. ≈ 3 min
- Pour approximately 250 ml of white dough, bake for 10 minutes, or until the surface is set.
- Cover with a layer of taro slices, wait until they stick, then pour another layer of white batter; continue this process until all the batter and taro are used. ≈ 3 min
- Once the cake is baked, pour the batter into the ramekins, cover, and bake for another 10 minutes.
