Shredded beef croquettes, breaded and fried
American-style beef croquettes: slow-cooked beef, shredded, and bound with a thick roux-based sauce, then formed into breaded balls and deep-fried.
The meat simmers in the broth for an entire night, after which the clarified broth is used to create a very thick sauce. Once cooled, the mixture can be easily shaped into balls or cigars, and served with bread or fried.

Directions
- Place the beef, broth, water, bouillon cubes, bay leaf, dried onion, Worcestershire sauce, salt, and pepper in a slow cooker. Cook on low for the entire night, until the meat is tender: you will obtain approximately 1 liter of broth.
- Let the broth cool in the refrigerator until the fat solidifies on the surface, then remove it.
- Tenderize the meat with two forks, or chop it in a food processor if you prefer smaller pieces. ≈ 8 min
- In a saucepan, prepare a light-colored roux by melting the butter and adding ½ cup of flour. ≈ 3 min
- Without stopping to stir, gradually add all the broth: you will obtain a very thick sauce.
- Mix in the meat, season with salt and pepper, transfer to a dish, and let it cool in the refrigerator for a few hours, or preferably overnight.
- Form small balls, about 4 cm in diameter, and roll them in flour, then in beaten egg, and finally in breadcrumbs. ≈ 10 min
- Fry them in oil at 175 °C until golden brown, and serve hot.
