Directions
- Sift the rice flour. ≈ 2 min
- In a large saucepan, heat the flour with the oil over low heat, stirring constantly, until it loses its raw taste and takes on a golden color, about 10 minutes.
- Add 4 cups of water, then gradually add more water until you have a smooth, creamy mixture. Whisk if any lumps form.
- Add the sugar gradually, tasting as you go, and allow it to thicken over low heat, stirring constantly.
- The halva then releases its excess oil: remove it with a spoon. ≈ 3 min
- When it has the consistency of thick yogurt, add the rose water and saffron, and mix until you reach the desired consistency (add more rose water if it’s too thick). ≈ 4 min
- Pour servir, placez dans a dish and garnish with pistachios, walnuts, and almonds. It can be stored in the refrigerator in a sealed container.
