This modern, Dutch-inspired zabaglione incorporates the flavors of St. Nicholas' Day: red wine, cinnamon, and cloves. It can be prepared in a water bath in about 20 minutes.

Directions
- Bring the wine, sugar, cinnamon, and cloves to a boil, then reduce by a third.
- While this is happening, whisk the yolks with the remaining sugar in a heat-resistant mixing bowl, using an electric mixer, until they are very pale and fluffy. ≈ 4 min
- Hang the salad bowl in a pot filled with almost boiling water.
- Make sure the water doesn’t come into contact with the salad bowl. ≈ 3 min
- Keep the water at a simmer, and, while constantly whisking in the mixer, slowly pour the reduced wine over the yolks.
- Continue whipping until the sabayon is thick and airy. ≈ 4 min
- Divide the zabaglione evenly among 4 attractive glasses and serve immediately, with tangerine segments. ≈ 2 min
