Directions
- Combine the broth and wine: the mixture should be warm to prevent the meat from becoming tough.
- Grease the sides of the dish. ≈ 3 min
- Melt the butter with the ham and sage in a pan that is just the right size for the ribs (otherwise, the butter will burn in the areas without meat).
- Cook the bacon slowly until the fat begins to melt.
- Add the edges and cook for 3 to 4 minutes per side over medium heat, shaking the pan occasionally.
- Pour the wine and broth mixture onto both sides of the meat, and wait for a minute for the meat to return to its original temperature.
- Continue to simmer for about ten minutes, until most of the liquid has reduced.
- Place the ribs on hot plates, pour over with the remaining sauce, along with sage and ham, and serve immediately with mashed potatoes: the meat will cool down quickly.
