Directions

  1. Make sure the milk and butter are thoroughly chilled. ≈ 3 min
  2. Preheat the oven to 240 °C (approximately 160 °C with a fan).
  3. Cut the butter into small cubes using two knives. In a large bowl, mix the flour, butter, sugar, salt, baking powder, vanilla sugar, and crème fraîche together with your fingers. Quickly add the liquid and mix until a smooth and even dough forms. The dough should remain soft and slightly sticky: do not knead it and do not use a mixer. ≈ 10 min
  4. Lightly flour a baking sheet. Form a ball with the dough, then flatten it to a thickness of 1.5 to 3 cm. Cut it into 8 triangular pieces, or use a glass to create circles. Brush the top with milk for a beautiful golden color. ≈ 10 min
  5. Arrange the scones on a baking sheet lined with parchment paper, leaving some space between them. ≈ 3 min
  6. Place in the center of the oven and bake for 12 to 19 minutes, depending on the thickness.
  7. Turn off the oven and let the scones rest for 5 to 10 minutes.
  8. While you’re doing that, prepare the clotted cream: in two small bowls, work separately with 125g of heavy cream and 100g of mascarpone. Then, combine them and mix with a spatula until you have a smooth, thick sauce. Be careful not to over-beat it, as this will make it too runny. ≈ 4 min
