Pork dish with pineapple, roasted pork with pineapple and sherry
A festive Catalan dish: a golden-brown pork loin, braised with Xérès and broth, with slices of pineapple, served in alternating slices with the pineapple …
The sherry and pineapple syrup give this pork loin a delicate and fragrant sauce, complemented by the cream. When served cold, the meat slices cleanly and stands apart from the pineapple.
