Salmon with peach sauce
A simple and traditional Norwegian dish, featuring salmon, potatoes, and onions.
“Plukkfisk” is a delicious and easy-to-prepare dish. It is based on a recipe from Mother Anna, who learned it in a traditional cooking school in 1932.

Directions
- Follow these steps: Peel the apples and cook them until they are tender (or peel them after cooking).
- Chop the onion and simmer it in a small amount of water (not too much, just enough to cover the onion) until it becomes translucent and tender.
- Add the cut-up cod (preferably frozen, skinless) and let it simmer with a little salt.
- Rule: A lot of onions, cod, and butter create a delicious flavor. ≈ 3 min
- Remove everything from the griddle and mix the apples, onion, and fish together. ≈ 3 min
- Gently stir until a thick and uniform consistency is achieved. ≈ 4 min
- Add the butter and let it melt, then pour in the milk and mix gently until you have a smooth consistency. ≈ 4 min
- Season with extra butter (a generous amount of butter adds a nice flavor), and optionally, a few tablespoons of sour cream. ≈ 2 min
- Also season with a little grated nutmeg and walnuts (essential), salt, and pepper. ≈ 2 min
- The fish should be firm enough so that it doesn’t fall apart on the fork. ≈ 3 min
- You can also decorate it with chopped chives or parsley. ≈ 2 min
