Mushroom in white wine sauce
Pan-fried mushrooms, coated in a sauce made with white wine, vegetables, and cornstarch, and simmered with parsley: a comforting dish.
A creamy sauce made with slow-cooked vegetables, white wine, and broth, then blended and thickened with flour, coats the sautéed mushrooms. This is a delicate Basque dish.

Directions
- Clean the mushrooms by removing the dirt with a damp cloth. ≈ 8 min
- Cut each mushroom into 4 or 6 pieces using a sharp knife, or leave them whole. ≈ 8 min
- Place the oil paint and garlic in a medium-sized saucepan. ≈ 3 min
- Once the garlic starts to turn color, add the onion, carrot, and chili pepper. ≈ 3 min
- When you start gilding, moisten it with white wine.
- When reducing, add the broth.
- Cook for 15 minutes over low heat.
- Stir, then add the Chinese ingredients and return to the heat. ≈ 4 min
- Mix the cornstarch with cold water and add it to the sauce to thicken it. ≈ 4 min
- Use oil paint to create a vibrant, fiery effect on the mushrooms.
- Add the prepared sauce and parsley. ≈ 3 min
- Cook together for 10 minutes over low heat, then add salt.
