The combination of spaghetti and meatballs is an Italian-American invention: in Italy, meat-based sauces are typically served with fettuccine or tagliatelle. Here, ground beef and chicken meatballs, browned in olive oil, simmer in a tomato sauce flavored with basil.

Directions

  1. Fill your largest container with 5.76 liters of water and 3 tablespoons of salt. ≈ 10 min
  2. Place the pot on a hot stove. ≈ 3 min
  3. Combine the ground meat, breadcrumbs, grated cheese, chopped parsley, and beaten eggs (add the eggs one at a time, mixing as you go). ≈ 3 min
  4. Sprinkle with chopped garlic, 2 tablespoons of olive oil, and seasonings. ≈ 2 min
  5. Mix thoroughly until everything is well combined. ≈ 4 min
  6. Shape the mixture into small balls, using a spoon or your hands. ≈ 10 min
  7. Gently press the mixture, just enough to hold it together, but not too firmly, otherwise the meatballs will become hard and dry. ≈ 3 min
  8. In a heavy-bottomed pan, heat olive oil over medium-low heat.
  9. Add the whole bulbs of Allium sativum (garlic). ≈ 3 min
  10. Turn the pods over to color them on all sides, then, when they are about halfway through, crush them in the oil paint. ≈ 4 min
  11. If the garlic cloves are brown, discard them. ≈ 3 min
  12. When the oil paint is warm, add the meatballs to the pan, leaving about 4 cm (1.5 inches) of space between each one so that they can be easily turned over.
  13. Frequently turn the meatballs with a spatula or spoon to prevent them from sticking. ≈ 3 min
  14. Make sure to keep enough oil paint in the palette (about 1 cm deep).
  15. Do not use fresh olive oil: any good-quality Italian olive oil will do. ≈ 3 min
  16. Once the meatballs are nicely browned on all sides, remove them from the pan and drain them on paper towels.
  17. Add the next batch to the pan and continue until everything is cooked through.
  18. Add the pasta to the now boiling water and cook according to package directions, usually about 12 minutes.
  19. Add the chopped red pepper flakes, garlic, and onion to the oil used to cook the meatballs.
  20. Come back in about 5 to 7 minutes, until the onion is tender.
  21. Add the beef broth, crushed tomatoes, and herbs.
  22. Bring to a simmer and cook for about 10 minutes.
  23. Mix the hot, drained pasta with a few spoonfuls of sauce. ≈ 4 min
  24. Return the meatballs to the remaining sauce. ≈ 3 min
  25. Arrange the pasta in the plates. ≈ 2 min
  26. Top with meatballs, sauce, and extra grated cheese. ≈ 10 min
