Königsberg was the former Prussian city where the philosopher Kant lived, now known as Kaliningrad, located in Russian territory. Its meatball dish, poached in a broth, is served with a creamy lemon and caper sauce, alongside mashed potatoes.

Directions

  1. Cut the small bread into small pieces and pour the cream over them, drop by drop. ≈ 8 min
  2. Continue to sauté the finely chopped onion until it is softened.
  3. Combine the cooled onion with the bread and egg.
  4. Add the finely chopped parsley and anchovies (without the bones). ≈ 3 min
  5. Thoroughly mix all the ingredients, season with the specified spices, and taste the mixture. ≈ 4 min
  6. Form small meatballs (about the size of table tennis balls) and gently place them in the simmering broth, without overcrowding the pot.
  7. Cook for ten minutes over low heat.
  8. Use a slotted spoon to remove the meatballs and keep them warm. ≈ 3 min
  9. Pour the broth through a sieve into a pot.
  10. Add the cream (reserving 4 tablespoons of cream), and reduce the broth over high heat until it has reduced by half.
  11. Whisk the egg yolks with the remaining cream and pour into the broth.
  12. Stir until the broth is hot, but do not let it boil.
  13. Add the lemon zest and capers, then season with pepper. ≈ 2 min
  14. Return the meatballs to the very hot sauce and simmer for 10 minutes.
  15. Serve the Königsberg meatballs with salted mashed potatoes. ≈ 2 min
