Directions

  1. Sift the flour. ≈ 2 min
  2. Make sure the margarine or butter is in a square shape, then store it in the freezer.
  3. On a cold surface, create a volcano using the flour. Place the salt and half of the water in the center. ≈ 3 min
  4. Using a spoon, gently mix the ingredients, gradually adding the remaining water. The dough should not be too stiff or too sticky. ≈ 4 min
  5. Work with the dough for about 15 minutes, kneading it to make it smooth. It should be smooth and no longer stick to the surface.
  6. Cover it with a damp cloth or plastic wrap and leave it in the freezer for 30 minutes.
  7. Place the dough on your work surface and make a cross on top with a knife. ≈ 3 min
  8. Roll out the four sides of the dough on a rolling pin to form four “flaps”. ≈ 4 min
  9. In the center of the dough, place the butter and fold the edges over to cover it. ≈ 3 min
  10. Roll out the dough on a floured surface. ≈ 4 min
  11. Here’s a simple step: fold the dough in thirds, like a tri-fold. Cover and refrigerate for 10 minutes.
  12. Turn the dough 90 degrees, roll it out again, and this time make a double fold, folding both halves towards the center like a double door. Return to the refrigerator for 10 minutes.
  13. Spread it out again, make a third double turn, then turn 90 degrees and make a final single turn. Cover and store in the refrigerator or freezer.
  14. When using, take a portion of the dough and spread it out into sheets about 5mm thick before baking. ≈ 4 min
