Directions
raw, unwashed apples
- Peel the apples, cut them into 2 cm cubes or 0.5 cm slices, and rinse them. ≈ 8 min
pre-cooked potatoes
- Cut them into large slices. ≈ 8 min
Cooking
- Melt the fat in a hot frying pan. Ideally, brown the onions first; this will prevent them from becoming bitter.
- Add the apples (and caraway seeds) in a single layer, without overlapping them, in several batches if necessary, and cook them for about 10 minutes, turning them occasionally.
- For raw potatoes, cover for 10 minutes, then continue cooking uncovered; check for doneness with the tip of a knife. Add more fat if they appear dry.
- If you haven’t already browned the onions at the beginning, add them when the apples are almost cooked, but be careful not to let them turn brown. ≈ 3 min
- When they are golden brown on all sides, season with salt, pepper, and add the bacon and herbs. ≈ 2 min
As a complete meal
- Crack two eggs into a bowl and mix them with the sautéed apples in the still-warm frying pan.
