“Filosoof” is a traditional Dutch oven dish, originally created to use up leftover meat. It is typically served with apple sauce.

Directions

  1. Gather all the cold ingredients. ≈ 3 min
  2. Slice the onions thinly and the apples into 4mm thick slices. ≈ 8 min
  3. Cut the meat into small pieces, about 5 mm in size. ≈ 8 min
  4. Heat the fat in a pan.
  5. Sauté the onions until they are golden brown, then remove them from the pan.
  6. Grease a baking dish. Layer with apples, then meat, then onions. Sprinkle nutmeg, pepper, and salt over each layer of apples. Repeat until all ingredients are used, finishing with a final layer of apples. ≈ 3 min
  7. Pour the juice over the dish, sprinkle with white breadcrumbs, and add a few dollops of butter. ≈ 2 min
  8. Preheat the oven to 200 °C (400 °F) and bake for approximately 30 minutes.
  9. Serve immediately after coming out of the oven, alongside the apple compote.

  • 40 g of fat (meat juice or butter)
  • 4 large onions
  • 800 g of terracotta-baked apples
  • salt
  • pepper
  • walnut and nutmeg
  • 350 ml of meat juice
  • 4 tablespoons of finely crumbled white bread
  • butter for the dish
  • apple compote
