Papaitan is a traditional Filipino stew, named for its bitter flavor. It features offal and beef, simmered with ginger, garlic, onion, and chili peppers, followed by the addition of bile in small amounts to achieve a balanced bitterness. Serve hot.

Directions

  1. Wash the raw offal and rub it with a banana leaf, using 3 tablespoons of salt, to remove the odor. ≈ 2 min
  2. Make sure the casings are perfectly clean. ≈ 3 min
  3. Once they are clean, place them in a large pot and bring to a boil until they are tender.
  4. Remove them and cut them into 1 cm cubes or strips. ≈ 8 min
  5. Book now. ≈ 3 min
  6. Let’s bring back ginger, garlic, and onions.
  7. Once the onions are cooked, add the offal. ≈ 3 min
  8. Sprinkle with salt and pepper to your liking. ≈ 2 min
  9. Mix well, then pour in enough water to cover. ≈ 4 min
  10. Bring to a boil, then add the beef tenderloin.
  11. Cook until the fillet is cooked through.
  12. Add the bird’s eye chili peppers. ≈ 3 min
  13. Add the bile gradually, and with caution, to avoid making the dish too bitter. ≈ 3 min
  14. Add the fish sauce to your liking. ≈ 3 min
  15. Serve in a warmed bowl, garnished with fresh chopped onions. ≈ 2 min
