Directions
- Clean the sea urchins and cut them into large strips (the smaller ones can be left whole). ≈ 8 min
- Roughly chop the onion, removing the root end. ≈ 8 min
- Prepare the globe artichokes and cut them into quarters; then soak them in lemon water to prevent them from turning brown. ≈ 8 min
- In a saucepan, preferably one made of earthenware, heat 3 tablespoons of oil and cook the cuttlefish until it is firm and golden brown. Remove it and keep it warm.
- Reduce the heat and allow the onion to soften and turn translucent. ≈ 3 min
- Return the scallops to the pan and pour in the white wine. ≈ 3 min
- Cover and cook over medium heat for about 2 hours, or until the monkfish is very tender, adding more hot broth if the sauce becomes too thick.
- Salt lightly. ≈ 2 min
- Add the globe artichokes and cook for another 15 minutes.
- Serve hot, seasoned, with bread croutons. ≈ 2 min
- You can substitute the conger eels with squid or small octopuses, and the globe artichokes with broccoli rabe or zucchini, but the classic recipe features both conger eels and globe artichokes. ≈ 3 min
