Classic four-turn puff pastry

Puff pastry is made by alternating layers of dough and butter, which are repeatedly folded. It serves as the base for many pastries and savory pies.

Directions
- Mix the salt with the majority of the flour. ≈ 4 min
- Add the cold water to the flour and salt, then work the mixture until a dough forms. ≈ 3 min
- Knead for approximately 80 times to achieve a soft dough that develops gluten. ≈ 10 min
- Flatten the dough to help it cool down faster, then place it in the refrigerator.
- Combine the softened butter with the small amount of flour until you have a smooth, spreadable dough. ≈ 4 min
- Cut the cold, wet material into a rectangle approximately 0.5 to 1 cm thick. ≈ 4 min
- Leaving a 2 cm margin on the edges, spread the butter evenly over two-thirds of the dough. ≈ 4 min
- Fold the dough in thirds, like a letter, starting with the side without butter. ≈ 3 min
- Place the dough in the refrigerator for 20 to 30 minutes to allow it to rest and become easier to work with.
- Fold the dough again into a large rectangle, the same size as the first. ≈ 4 min
- Fold the two small sides inwards to meet in the middle, then fold in half: this creates four layers, which is known as a “double fold”. ≈ 3 min
- Refrigerate, then repeat the folding and pressing process twice. The puff pastry is now ready to be used.
