Chè tổ yến, bird’s nest with cordyceps, double-boiled
A precious Vietnamese dessert: pure bird’s nest, gently cooked in a bain-marie with cordyceps, then sweetened with sugar candi and flavored with vanilla.
Swallow’s nest, made from the saliva of the swallow, is a highly sought-after delicacy in Asia. It is cooked in a bain-marie (a water bath) in a sealed pot, which helps to maintain its delicate texture; the cordyceps, a medicinal mushroom, is also included.
