Directions
- The day before, place the cod in a bowl of cold water, changing the water several times to remove the salt. ≈ 3 min
- The next day, cut them into pieces, dry them with a dishcloth, dredge them in flour, and lightly fry them in hot oil. Set them aside on a plate.
- In a separate pan, brown the peeled and chopped tomatoes. While this is happening, in a mortar, grind the garlic, almonds, pine nuts, and some parsley until you have a paste.
- Add this paste to the tomatoes with a little hot water and let it simmer for 15 minutes.
- Pour the sauce through a food processor and pour it into a ceramic pot. Add the peeled and sliced apples, and a little hot water. ≈ 3 min
- When the potatoes are almost cooked, add the cod and let it simmer until the potatoes are fully cooked. If the sauce becomes too thick, add a few spoonfuls of hot water.
- Taste and adjust the salt two or three minutes before removing from the heat. ≈ 2 min
