Homemade caramel ice cream

Directions
- Melt the butter in a pan, then sprinkle in the sugar. Stir constantly until the sugar melts and forms a light golden caramel.
- Carefully pour the water in, avoiding splashes, and let it simmer until the caramel is completely dissolved. Allow to cool.
- While doing this, whisk the egg yolks with the vanilla sugar until they become frothy, then season with salt. Add to a blender. ≈ 4 min
- Add the milk, cream, and cooled caramel, then mix everything together. Finally, churn in an ice cream maker or freeze until solid.
