Directions
- Melt 100g of sugar with 1 tablespoon of water in a saucepan over low heat, without stirring, to create caramel. Allow it to cook for a minute longer than you think it should before removing it from the heat: it should be a dark amber color.
- Pour the in the cream and milk. The caramel will then harden into a solid block: don’t worry, it will melt. Continue cooking until the caramel is completely dissolved.
- Whisk the remaining 3 tablespoons of sugar with the egg yolks, then gradually pour the hot mixture over, whisking constantly, until the mixture thickens enough to coat the back of a spoon. Stir in the salt and vanilla.
- Let it cool, then churn in an ice cream maker or freeze.
