Orange ice cream
A light and fragrant orange-flavored ice cream, made with eggs and cream, which should be prepared the day before for a refreshing dessert on hot days.
This orange sorbet is a classic French dessert, perfect for when the temperature rises. It’s light and fragrant, and can be prepared in about 20 minutes, after which it needs to be frozen overnight.

Directions
- Take small pieces of orange zest, removing the outer peel, and place them in a large mixing bowl. ≈ 3 min
- Crack the eggs: pour the yolks into one mixing bowl and the whites into another. ≈ 3 min
- Gradually add the sugar, mixing well until the mixture turns white.
- Bring 2 cm of water to a boil in a pot that is smaller than the salad bowl.
- Place the salad bowl over the pot, so that the steam heats it, and whisk for 10 minutes above the steam.
- Remove the mixing bowl and continue to mix until the mixture has cooled.
- Squeeze the juice from the orange. ≈ 3 min
- Gently heat it in a pot with the flavored alcohol to allow it to thicken.
- Let the juice cool completely, then pour it into the salad bowl and mix continuously.
- In the other bowl, whisk the egg whites until stiff peaks form. ≈ 4 min
- Whip the cream separately, in the same way, until it forms soft peaks. ≈ 4 min
- Gently whisk together the egg whites and cream. ≈ 4 min
- Incorporate this mixture gradually, adding it to the yolks in small amounts while gently folding the mixture together. ≈ 4 min
- Place it in the freezer for about one night to firm up.
