Sekaya is a creamy jam from Southeast Asia: a light caramel made with coconut milk, thickened with egg yolks, and flavored with pandan leaves. It thickens as it cools.

Directions
- Combine the sugar and water, and heat over low heat until a caramel forms.
- When the sugar begins to turn yellow, add the thick coconut milk. ≈ 3 min
- Stir briefly until the sugar is dissolved. ≈ 4 min
- Allow the mixture to cool completely.
- Once the mixture of coconut milk and caramel is thoroughly chilled, add the egg yolks, the pastry cream powder dissolved in a little milk, and the pandan leaf. ≈ 3 min
- Stir over medium heat until it boils.
- Let it cool: the cream will thicken.
