  1. Heat the milk.
  2. Cook it for at least 15 minutes, stirring with a wooden spoon from the bottom up.
  3. Pour: Pour the milk into a steel or earthenware container. ≈ 3 min

  5. Add 1 tablespoon of yogurt per liter of milk. ≈ 3 min
  6. Stir from the bottom, without disturbing the cream on the surface. ≈ 4 min
  7. Place the lid slightly ajar to allow steam to escape.
  8. Cover the container with a cloth. ≈ 3 min
  9. When water accumulates on top of the yogurt, don’t discard it. ≈ 3 min
  10. Use this water to prepare ayran. ≈ 3 min
  11. Salt this water to help preserve the cheese for a longer period. ≈ 2 min
