Directions
Dough
- Scrape the seeds from the vanilla pod and zest the lemon. ≈ 8 min
- Sift the flour and mix it with the powdered sugar, vanilla, zest, cinnamon, and salt. ≈ 4 min
- Dig a hole, crack the eggs into it, and mix the butter in small pieces with the flour. ≈ 3 min
- Quickly knead into a smooth dough, form into a ball, and let it rest in the refrigerator for at least 1 hour, covered.
Decoration
- Finely dice the apples and immediately toss them with lemon juice. ≈ 8 min
- Melt the butter and mix in the sugar, zest, cinnamon, and cloves.
- Add the rum and grapes to the apple mixture, then add the spiced butter, and let it marinate for 30 minutes.
Cooking
- Preheat the oven to 180 °C.
- Divide the dough into three equal portions. Press two-thirds of each portion into a 5mm-thick circle and place them on two baking sheets lined with parchment paper. ≈ 3 min
- Punch down the dough and let it rest for about 7 minutes, until it lightens in color; then let it cool.
- Spread the filling to a thickness of about one finger’s width. ≈ 4 min
- Roll the remaining third of the dough into thin logs and arrange them in a cross shape on top of the apples. ≈ 10 min
- Top the egg with milk, create a golden-brown surface, and sprinkle with apple chips. ≈ 4 min
- Continue to cook for another 10 minutes, until it is nicely browned, then let it cool completely.
Decoration
- Melt the chocolate with the butter using a double boiler.
- Chop the hazelnuts and toast them in a dry frying pan, keeping a close eye on them.
- Create chocolate squares by filling a mold, then sprinkle with hazelnuts and let set before cutting into squares.
