Ada dosa, Kerala rice and lentil pancakes
A Kerala-style breakfast: rice, chana dal, and black chickpeas soaked and then mixed with dried chili peppers, asafoetida, and salt, combined with shallot…
Unlike a regular dosa, the ada dosa is thicker and crispier, and it doesn’t require fermentation. All you need to do is soak the rice and legumes.
