Directions
- In a bowl, mix the milky coffee with the egg yolks, the sugar and the grappa. ≈ 4 min
- Whip the egg whites to stiff peaks, adding the salt. ≈ 3 min
- Sift the flour into the egg yolk mixture, mixing until you have a very thick batter. ≈ 3 min
- Gradually fold in the egg whites. ≈ 3 min
- Add the vanilla baking powder, mix, and let everything rest in the refrigerator while you heat the oil for frying.
- Wash and carefully dry the zucchini blossoms, then remove their base and the center. ≈ 2 min
- Fry the blossoms in the hot oil, one at a time, until golden.
- Place the fritters on paper towels, then let them cool. Dust them with confectioners’ sugar before serving.
