Yoğurt çorbası, Turkish yogurt and mint soup
A simple Turkish soup: a roux made with oil, yogurt, and meat broth, served hot with a drizzle of oil and chili flakes, and dried mint.
This yogurt soup is best served warm. The roux helps to bind the yogurt and prevent it from separating during cooking; a drizzle of chili oil and a sprinkle of dried mint complete the dish.
