Che khúc bạch is a popular dessert in Vietnam, enjoyed by people in all three regions of the country. Its chunked appearance and creamy, white color, made with fresh milk, give it its name. This dessert is typically served with longan or grape seeds, crunchy almonds, and a soft, fresh jelly. The flavor is refreshing and subtly sweet. To make a good che khúc bạch at home, follow this recipe carefully.

Directions
- Making the dough (at least 4 hours in advance)
- Mix 150 ml of milk with the powdered gelatin and let it rest for 15 minutes to allow the gelatin to dissolve.
- Add the whey and 50-60g of sugar to a bowl, and mix until the sugar is dissolved. Divide the mixture into two equal portions. ≈ 4 min
- Part 1: Making the white dough ≈ 3 min
- Bring a pot of water to a boil, then reduce the heat and pour in the mixture. Mix the mixture thoroughly while it’s heating. Once the mixture is warm, add 1/2 portion of gelatin and mix until it is completely dissolved.
- Cover the mold with plastic wrap. Strain the dough through a sieve to remove any lumps and bubbles, resulting in a smooth dough. Place the dough in the refrigerator for 4 hours until it firms up.
- Part 2: Making the green dough ≈ 3 min
- Bring the remaining mixture to a boil. Add the remaining gelatin and mix well. Mix the green tea with the water, and add a small amount of the hot mixture to completely dissolve the green tea. Strain the green mixture through a Chinese sieve to remove any lumps, then refrigerate for 4 hours until it sets.
- Note: The dough will be firmer and more solid if it is chilled for a longer period. Filtering the dough helps to remove any undissolved particles, resulting in a smoother dough.
- Note: Do not cook the milk directly, as this can cause the flavors to be lost.
- Note: If you prefer a raspberry and chocolate flavor, use raspberry syrup and cocoa to create attractive-looking pasta with a delicate aroma. ≈ 3 min
- Prepare the sweet mixture (at least 3 hours in advance)
- Boil 1 litre of water with 80-90g of cane sugar. Bring to a boil, stirring until the sugar is completely dissolved.
- Wash the pandan leaves, roll them up, and add them to the sweet mixture when it is boiling. Remove them immediately.
- Note: Pandan leaves can be used to add a more refreshing scent, but the color will be a bit green. ≈ 3 min
- Prepare the walnuts, macadamia nuts, and cranberries (30 minutes beforehand)
- Roast the walnuts and macadamia nuts over low heat until they are golden brown.
- If you are using fresh longans, separate the seeds and the flesh. Rinse with water. Add the flesh to the pandan leaves in the sweetened milk for a white longan drink and a fragrant, sweetened milk. Add the pandan leaves last. ≈ 8 min
- If you are using canned goldenberries, separate the seeds and add the liquid to the sweetened mixture to enhance the flavor. ≈ 2 min
- Remove the dough from the refrigerator and cut it into small pieces.

- Place the dough and the currants in a bowl, add the sweetened milk and the macadamia nuts. If you want to add other ingredients, such as raisins, berries like raspberries, melon, or other fruits, add them to diversify the colors. ≈ 3 min

- When cooking in a steamer, reduce the heat to prevent the dough from becoming too hot. This will make it more difficult to firm up.
- Boil the water in a separate pot well in advance, so that it’s ready to steam the milk without compromising its rich and creamy flavor.
- Cane sugar provides a sweet and refreshing taste, which is essential for creating a sweetened milk drink with a lingering sweetness. ≈ 3 min
- The dough will be better if it is allowed to rest for a longer period, but do not let it rest for more than 4 days. Mix it immediately to preserve the flavor. ≈ 4 min
- In the summer, use fresh elderberries from May to July and grapes from August to September. ≈ 3 min
- The dessert will be even better if it is served cold. If you prefer to eat it fresh, add it to the refrigerator.
