The “gâteau battu” is a regional specialty of Picardy, originating in Abbeville. This rich dessert, made with egg yolks and butter, is often referred to as “Gasteau mollet” or “bread aux oeufs” by the Flemish people.

Directions

  1. Dissolve the yeast in a small amount of warm water. ≈ 4 min
  2. Mix one egg with the flour, then add the salt, sugar, and yeast mixture. ≈ 4 min
  3. Knead the dough for 15 minutes.
  4. Add the butter and knead again for 15 minutes.
  5. Pour the batter into a greased, round cake tin (about 1/3 full). ≈ 3 min
  6. Cover with a damp cloth. ≈ 3 min
  7. Let the dough rest for 2 hours, then bake for 20 minutes (in a hot oven).

  9. Dissolve the fresh yeast in a small amount of lukewarm milk (but not hot, as this could destroy the yeast’s effectiveness). ≈ 4 min
  10. Grease your cake pan. ≈ 3 min
  11. Separate the yolks from the whites. ≈ 2 min
  12. Melt the butter slowly (or in the microwave).
  13. In a bowl, whisk together the egg yolks and sugar. Add the melted butter, the dissolved baking powder, then the flour and salt, and the Calvados if you want to add an alcoholic note to this delicious cake.
  14. “Get to work: whisk vigorously with your hands for at least 15 minutes (the easiest option is to put the mixture in a food processor and let the machine do the work for you).”
  15. Fill the mold to 1/4 of its height, cover with a dry dishcloth, and let it rise for about 2 hours in a warm, draft-free place.
  16. Preheat your oven to 210 °C.
  17. Bake for approximately 15 minutes, and check for doneness by inserting a knife into the center; when the knife comes out clean, your cake is ready to be enjoyed.
