Directions
- Cut the meat into slices about 2 cm thick and flatten them with the palm of your hand. ≈ 8 min
- Season with chopped garlic, sage, salt, and pepper. ≈ 2 min
- Gild the meat on both sides in a pan, then transfer it to a serving dish.
- Stir the pan’s bottom with water, then cook the mushrooms in a pot.
- Continue to cook the mushrooms in butter until the liquid they release has completely evaporated.
- Next, place the mushrooms in the pot with the meat. ≈ 3 min
- Heat the cream and broth (or red wine) in a saucepan.
- Continue to simmer until about 2/3 of the liquid has evaporated.
- Mix the flour with a little water, then pour the mixture into the pot while stirring. ≈ 4 min
- Pour the sauce over the meat and let it simmer for about 10 minutes.
