Perashkis' Tatar with meat and ground apple
Small, open Tatar shoes filled with meat, apple, and onion in a kefir and butter dough. A classic Tatar dish.
Peremech, also known as perashkis, are open-toed Tatar pastries. Their soft, buttery and kefir-based dough encases a filling of meat, potato, and onion, which cooks in its own broth.

Directions
- Melt 100g of butter.
- Add the flour, salt, and baking powder, then mix well. ≈ 4 min
- Then, add 2 eggs and 1 glass of kefir or yogurt. ≈ 3 min
- Knead the dough, adding more flour if needed. ≈ 10 min
- The dough should be as soft as pelmeni dough. ≈ 3 min
- Prepare the filling: dice the raw potato, onion, and meat. ≈ 8 min
- Salt, pepper, and mix. ≈ 4 min
- Form small patties or rounds with the dough. ≈ 10 min
- Leave the center empty. ≈ 3 min
- Place the filling in the center and fold the edges over. ≈ 3 min
- Line the baking sheet with parchment paper. ≈ 3 min
- Bake at 200 °C.
- After 20 minutes, check the oven: a liquid is forming inside the pierogies.
- Then, place a spoonful of butter in each pastry and return the pan to the oven.
- After 20 minutes, check again: the perashkis are starting to turn golden and the broth inside is simmering.
- Brush them with egg and gently press the filling into the pastry with a spoon. ≈ 4 min
- Bake for another 15 minutes.
- The perashkis are now ready. ≈ 3 min
- Place them in a pot and cover. ≈ 3 min
- Enjoy them once they have cooled down.
