Spinach and rice rolls (dolma) with elderflower juice
Armenian lentil-filled rolls for Lent: Chickpeas, beans, lentils, and bulgur rolled in cabbage leaves, cooked in elderflower juice.
This Armenian lentil dish, traditionally made during Lent, is cooked in elderflower juice, which gives it a tangy and fruity flavor. The lentils, chickpeas, Jerusalem artichokes, and onions are ground, then mixed with the other ingredients (lentils, bulgur, and spices) before being rolled in cabbage leaves.
