Traditionally served during Lent or at the New Year, this Armenian dolma is a vegetarian dish. Lentils, bulgur, rice, and softened onions are rolled in sour cabbage leaves, then simmered gently for about four hours. It can be served hot or cold.

Directions

  1. Soak the beans, lentils, and chickpeas for at least 8 hours, changing the water several times.
  2. Add the bulgur and rice, then rinse everything together. ≈ 2 min
  3. Chop the onions, not too finely, and then sauté them until softened. ≈ 8 min
  4. Once the onions are softened, add the salt, pepper, 4 tablespoons of tomato paste, and the dried herbs. ≈ 3 min
  5. Please come back in about two minutes.
  6. Add the chopped onions to the soaked legumes in a large bowl and mix well. ≈ 4 min
  7. Add a glass of boiling water and let it sit for half an hour so that the filling becomes softer.
  8. Spread the filling evenly among the sour cabbage leaves. ≈ 10 min
  9. Place the rolls in a saucepan. ≈ 3 min
  10. Mix 3 tablespoons of tomato paste with plenty of water, and pour over the buns, ensuring they are fully coated and extend beyond the edges by about two fingers. ≈ 4 min
  11. Place a heavy plate on top. ≈ 3 min
  12. Cook for approximately 4 hours over low heat, until everything is cooked through.
  13. Serve cold or hot, with raw onion and vinegar-dressed vegetables. ≈ 2 min
