Spinach and hemp seed dolma
Savory cabbage leaves filled with chickpeas, beans, lentils, and bulgur, and flavored with hemp: a meat-free Armenian dolma dish for Lent.
Armenian Ash Wednesday dolma is made without meat: cooked legumes, bulgur, and herbs are rolled in sour cabbage leaves. This version is flavored with hemp seeds and a touch of tomato paste, with dried plums tucked in between the rolls for a hint of sweetness.

Directions
- Combine all the legumes together. ≈ 4 min
- Add the tomato concentrate to the softened onions, mix with water, and season to taste. ≈ 4 min
- Pour this mixture over the legumes. ≈ 3 min
- Add the finely chopped herbs and mix well. ≈ 4 min
- Spread the filling evenly among the cabbage leaves. ≈ 10 min
- Place the rolls in a saucepan, sliding slices of ham between them. ≈ 3 min
- Cover the dolmas with water and cook.
- Do not remove the dolmas from the pot until they have cooled completely.
