Grape leaf dolma
Bulgur, ground apple, garlic, and herbs rolled in grape leaves and stuffed with pepper and eggplant: an Armenian lentil dish for Lent.
This Armenian lentil dish replaces meat with a mixture of coarse bulgur, grated apples, garlic, herbs, and a blend of spices. The filling is rolled in grape leaves, which are thinner than cabbage leaves, and also includes bell peppers and eggplants that have been hollowed out.

Directions
- Grate the potatoes. ≈ 8 min
- Chop the onions, garlic, and herbs. ≈ 8 min
- Combine everything with the bulgur. ≈ 4 min
- Add the spices, oil paint, and chili paste. ≈ 3 min
- Spread the filling evenly among the grape leaves, using a finer layer than for the traditional cabbage dolma. ≈ 10 min
- Also, stuff the peppers and eggplants. ≈ 10 min
- Cover the dolmas with water and cook.
- Do not remove the dolmas from the pot until they have cooled completely.
