This traditional Serbian soup combines vegetables, leeks, and cheese. A paprika-infused broth gives it color and a hint of spice.

Directions

  1. Don’t forget the chopped leeks in the bacon. Chop the greens into fine strips, salt them, and knead them until they release their juices. Mix them with the leeks and bring everything back together.
  2. Pour the approximately 2 liters of water. Prepare a roux with the flour, paprika, and a little bit of bacon, add it to the soup, and season with the hot pepper. Let it simmer for about 20 minutes.
  3. Finally, add the mashed cheese to the beaten eggs and let it cook for a little while longer.

  • 700 g of leafy greens (Brassica oleracea var. viridis), washed
  • 2 leeks
  • 250 g of aged cheese, mashed
  • 2 tablespoons of bacon
  • 1 tablespoon of flour
  • 2 eggs
  • 1 small, very spicy chili pepper
  • 1 teaspoon of mild paprika
  • 1 tablespoon of salt
  • 2 liters of water
