This crab in mayonnaise is a seaside appetizer or starter. The crab meat is cooked in salted water, carefully picked from the shell, and then combined with a spoonful of mayonnaise and chopped onion. It can be spread on toasted bread, very simply.

Directions

  1. Cook the crab starting from cold water, in seawater (or saltwater at 45g of salt per litre), for 10 minutes from the moment it boils.
  2. Let it cool, with the curved side facing up.
  3. Remove the legs and claws from the crab. ≈ 3 min
  4. Open it from the belly, remove the gills, and separate the flesh. ≈ 2 min
  5. Also, carefully and patiently separate the flesh from the legs and claws. ≈ 2 min
  6. Remove any remaining bits of shell from the flesh and then press it flat to ensure that all pieces of shell have been removed. ≈ 3 min
  7. Wash the head’s shell under water, dry it, and set it aside. ≈ 2 min
  8. Place the chopped meat in a bowl and add a small amount of mayonnaise, but not too much. ≈ 3 min
  9. Chop the preserved onion and add it. ≈ 8 min
  10. Combine all the ingredients and season with salt. ≈ 4 min
  11. Spread on the toasted bread slices. ≈ 4 min
