Directions
- Peel the green papaya and remove the seeds. ≈ 8 min
- Cut it into thin slices, either long or diagonally. ≈ 8 min
- Soak the slices for 15 to 20 minutes in salted water to remove the latex and make them crisp.
- Rinse several times with clear water. ≈ 2 min
- Make sure to drain it thoroughly. ≈ 2 min
- In a separate bowl, combine the sugar, salt, and vinegar with a small amount of warm water. ≈ 4 min
- Stir until the sugar and salt are completely dissolved. ≈ 4 min
- Add the hot peppers to your liking, and some slices of ginger if you wish. ≈ 3 min
- Place the papaya slices in the marinade.
- Mix thoroughly to ensure even coating. ≈ 4 min
- Store in a sealed container in the refrigerator for at least 3 to 4 hours, or overnight for a richer flavor.
