Pumpkin and curry velouté
A creamy pumpkin soup made with chicken broth, milk, and coconut milk, subtly flavored with curry. It’s sweet, smooth, and ready in under an hour.
This velvety dish combines tender pumpkin with milk, chicken broth, and a hint of curry. The coconut milk added at the end of cooking softens it and gives it a smooth, luxurious texture. Finely chopped shallots are added just before serving to enhance the flavour.

Directions
- Pour into a pot the chicken broth and milk.
- Add the pumpkin and bring to a boil.
- Reduce the heat and let it cook until the pumpkin is tender.
- Blend in a food processor or blender until you reach a smooth consistency. ≈ 4 min
- Place in a pot and bring to a boil.
- Season to taste. ≈ 2 min
- Add the curry powder and coconut milk. ≈ 3 min
- Let the sauce simmer over low heat for 10 minutes.
- If necessary, thicken with cornstarch mixed with water.
- Garnish with fresh onions. ≈ 2 min
