These pickles combine cauliflower, carrot, bell pepper, cabbage, and celery in a vinegar-based brine, enhanced with garlic, amba, and chili peppers. They are often served as a side dish with Middle Eastern cuisine.

Directions

  1. Soak the cauliflower in salted or vinegar-based water for about 30 minutes.
  2. Bring the water to a boil in a pot, then add the glass of vinegar.
  3. Add the salt, amba, and hot pepper. ≈ 3 min
  4. Combine the chopped vegetables with the garlic and Jamaican pepper, then cover with this brine. ≈ 3 min

  • 1 stalk of celery
  • A quarter of a head of cabbage
  • 1 very spicy red chili pepper
  • 3 cloves of Allium sativum (garlic)
  • A pinch of Jamaican pepper
  • 1 tablespoon of amba
  • 1 glass of vinegar (approximately 250 ml)
  • salt
  • water
