Vegetable coca with paprika
A Valencian-style dish: a mixture of mashed potatoes, olive oil, seasonal vegetables cooked with garlic and paprika, and then baked.
This vegetable soup uses seasonal vegetables: we start with those that take longer to cook, such as onions and bell peppers, and then add zucchini and eggplant.
