Unniyappam, Kerala banana jaggery rice fritters
A taste of Kerala: a sweet rice dough sweetened with jaggery, flavored with ripe banana, coconut, and cardamom, and deep-fried into small, golden balls.
Unniyappam is one of the most popular snacks in Kerala, prepared for festivals and family meals. The dough is allowed to rest for several hours to become light, then it is fried in a special pan with small holes, which gives it its round shape.
