Directions
- Combine the dough ingredients until a smooth dough forms, then knead for at least 10 minutes, by hand or with a dough hook. Place the dough in a bowl, cover with cling film, and let it rise for 1 hour in a warm place, away from drafts.
- Place a sheet of parchment paper on a surface and lightly dust it with flour. Spread the dough evenly over the parchment paper and roll it out into an oval-shaped loaf, approximately 25 × 30 cm. Let it rise for 30 minutes.
- While you’re doing that, preheat the oven to 230 °C (450 °F) with the baking stone and a small container for the steam. If you don’t have a baking stone, place a baking sheet in the oven and a metal pan on the bottom rack.
- After 30 minutes, draw a pattern into the dough with your fingers. Whisk the egg with the milk and brush it over the dough. Sprinkle with sesame seeds and nigella seeds, and let it rise for another hour.
- Slide the dough onto a hot surface (or a hot baking sheet) and pour some water into the container (or dish). Bake for 13 to 18 minutes, or until the bread is golden brown and cooked through. Let it cool on a wire rack.
