Rhubarb tart
A rhubarb tart arranged in circles on a bed of breadcrumbs and compote, for a tart and relatively simple dessert, ready in about 50 minutes.
The rhubarb tart is appealing due to its bright acidity and neat arrangement of stalks in circles. A base of breadcrumbs absorbs excess juice, while the compote fills in any gaps. This is a simple recipe, ready in about 50 minutes.

Directions
- Prepare the dough yourself, or buy pre-made dough. ≈ 3 min
- Grease a tart tin or line it with parchment paper. ≈ 3 min
- Spread the dough evenly over it. ≈ 10 min
- Trim the edges that extend beyond. ≈ 8 min
- Use a fork to prick the bottom of the pastry so that it doesn’t puff up during baking. ≈ 3 min
- Keep the rhubarb stalks and remove the leaves. ≈ 3 min
- Wash the stems and cut them lengthwise if they are too thick. ≈ 2 min
- Cut them into pieces about 2 cm in size. ≈ 8 min
- During the peeling process, do not cut the stem completely; instead, stop a little before the end and pull to remove a strip of skin, which will allow for quick and effective peeling. ≈ 8 min
- Boil some water.
- Briefly blanch the rhubarb pieces (for 5 to 10 seconds) to soften them. ≈ 3 min
- Sprinkle breadcrumbs on the bottom of the dish: this layer will absorb any excess moisture from the rhubarb. ≈ 2 min
- Arrange the rhubarb pieces in concentric circles. ≈ 3 min
- Fill in the gaps with the compote.
- Sprinkle with sugar. ≈ 2 min
- Preheat the oven to 200 °C (392 °F) for 10 minutes.
- Place the pie in the oven and bake for an additional 20 to 30 minutes.
